The Peabody restaurant debuts inside Johns Hopkins campus

There’s something special cooking up inside of Johns Hopkins new Research and Education building.

The Peabody – the highly anticipated St. Pete sister restaurant to Tampa’s Oxford Exchange – opened to the public Friday.

Dr. Jonathan Ellen, the president, CEO and physician-in-chief of Johns Hopkins All Children’s Hospital, knew that the draw would have to be great to bring the community into the hospital campus. After visiting the Oxford Exchange in Tampa, Dr. Ellen shared his vision with the owners, siblings Allison Casper Adams and Blake Casper of the famed Tampa Caspers Company ilk. He asked them to expand to St. Petersburg.

The Peabody is designed to pay homage to Baltimore’s George Peabody Library, which was “built for, and dedicated to, the citizens of Baltimore in 1857,” according to The Peabody website. Johns Hopkins, who founded the hospital’s mother campus in Baltimore, was inspired by the act for good. Dr. Ellen’s vision, inspired by these men, is to make The Peabody a place for collaboration and community in St. Petersburg.

Details cover The Peabody from floor to ceiling, much like the Oxford Exchange in Tampa. Bookshelves line the walls, giving the space the cozy feel of a library, while large windows give the space a bright, fresh atmosphere.

The Peabody plans to be open seven days a week. On weekdays, it will serve breakfast, lunch, and dinner, opening its doors on weekdays at 7 a.m. The breakfast offerings vary from complex and hearty to simple and healthy favorites like avocado toast, greek yogurt parfaits, oatmeal, omelets, and even smoothies served ’til 10:30.  All-day options include small plates and quick, casual lunch options like salads (with custom options) and sandwiches.

As for weekends, The Peabody will soon be a favorite brunch spot. Opening at 9 a.m., it will offer brunch on both Saturdays and Sundays, as well as all-day options. There is an impressively long selection of spirits, beer, and wine – as well as specialty cocktails like the Peabody Margarita. Local favorites like Buddy Brew coffee and Teabella tea will also be offered seven days a week on the espresso bar.

The best part? Almost everything on the menu can be taken to-go for busy hospital staffers looking to get a quick bite. Take a look at St. Pete’s newest restaurant below.
